A decent pot roast recipe

I need a good pot roast recipe. Ingredients, brands of those ingredients (if it's important), anything that will make my pot roast less dry and more flavorful. If you know of a good cut of meat that makes a good pot roast that isn't too greasy that would be great, too! My husband complaines that pot roast is too dry and too greasy (weird combo, I know).

I had the same problem for a while... Zeeny told me to buy a Chuck roast - and I've never had a dry roast since! I like to just sprinkle it with an envelope of lipton dry onion soup mix before I cover it with foil and put it in the oven (along with about a cup or so of water) It makes a super tasty gravy, too! Yummm... I think I'll buy a roast this week for next Sunday!

I really like this pot roast recipe from the television show "Good Eats." You brown the meat first for the flavor, then wrap it tightly with liquid at a low-and-slow braise. The connective tissue turns to gel and you get a yummy roast.

a friend made pot roast for me last summer--actually in a pot on the stove top. it was incredible. i'll try to get his recipe and share it.

The recipe from "Good Eats" looks really interesting. Thanks everyone for the ideas. If anyone else has recommendations, I'm always looking!
